Where to find the BEST macarons in Singapore

Macarons are dainty, colourful bite-sized cream-filled French cookies that have been lining the counters of chic patisseries here in Singapore. The recent macaron craze has been over the macarons from the French confections Laduree even though they a pretty penny of $3.80 per piece which is more than the average cost of a macaron at other patisseries here. Prices of macarons in Singapore range from $1.80 to $3 per piece while bigger macarons (size of a Digestive biscuit) can cost at least $7.

Macarons are made by folding ground almonds and sugar into meringue. The mixture is then piped onto a baking tray to dry before it is baked. Finally, a cream filling is piped between two dome-shaped shells and tadah, the macaron is formed! The key parts of the process include mixing the meringue, drying the macaron shells and baking at the right temperature. This ensures a smooth texture and macaron “feet” – a layered of ruffled crust at the bottom edge of the shell.

Macaron shells that are chilled with their filling for a day before consumption would taste better compared to eating the macarons straight away after filling them.
