Molten chocolate cakes — also known as chocolate lava cakes — are rich individual chocolate cakes with oozing molten centers. Surprisingly, they are easy enough for even the novice baker to make at home. And, what’s more, they can be prepared ahead of time, stored in the fridge and then baked at the last minute. If you are using a regular ramekin, it would usually take about 8-10 minutes. However, the time the cake spends in the oven greatly depends on the power of your oven too!
Another tip to getting that perfect molten cake is to bake the cake at a high temperature so that the outside of the cake cooks while the inside still remains molten. You can test the done-ness of the cake by inserting a toothpick into the centre of the cake. The toothpick should come out with chocolate stains on it.
After baking the molten cake, let them cool for a few minutes (between 2-3 minutes) before inverting them to remove the cake from the ramekin. The best way to eat the molten cake is to serve it with a huge scoop of vanilla ice cream , plain Greek yogurt or with some whipped cream and strawberries. Alternatively, melted ice cream can also be used for a thick creamy texture.
If you cut open and realize that your molten core has already solidified due to over baking, fret not! One simple trick of getting that molten centre in your chocolate cake is to to place a piece of melted chocolate in the chocolate cake and let the cake cool down in the refrigerator for a few hours before re-baking it in the oven at a low temperature so as to melt the chocolate core.
